The Sun's path is important to consider when positioning the athletic pavilion. It would not be wise to have a volleyball court facing the sun, since it will irritate the players. Because of this, it would be best if areas such as the basketball or volleyball court receive a controlled amount of sunlight. This sun map above was supplied by my friend Jack Cohen.

Your observation about the suns impact on players ability to compete when the sun is in players eyes is very important. Taking this into account I think orienting your athletic fields North - South would avoid direct sun light into the players eyes, allowing only sun rays from the side.
