After analyzing the floor plan, I highlighted the perimeters in which I could work within. I also annotated the unused spaces, lunch stations, traffic flow, etc.

Fantastic graphic; it does a great job of identifying existing conditions and where the problem areas are in your cafeteria. Its amazing how much a simple overlay over an existing drawing can communicate. Nice color selections.
I think a couple more graphic images like this one would have been a good technique to do some brainstorming to describe some ideas you had to address what's wrong with your cafeteria. On most architectural and interiors projects, a designer might go thru a half or even a full roll of tracing paper aka. "bum wad" brainstorming ideas/ alternates to solve the challenge ahead of them.
